Processed meat and health: What the research actually shows - and what you can choose instead

One in four Norwegians state that they eat processed meat four to seven times a week. Among young adults, this applies to four out of ten. This does not mean that a sausage every now and then is a disaster, or that all meat is harmful to health. But an almost daily intake of bacon, sausages, salami and other preserved meat products is a dietary pattern that makes sense to change.

The most important difference is between processed meat and pure, unprocessed meat. The research also points to the fact that quantity, frequency, preparation and the rest of the diet are of great importance.

In short

  • Processed meat is meat that has been salted, cured, fermented, smoked or preserved in some other way.
  • The IARC considers processed meat to be carcinogenic to humans, with the strongest documentation for colon and rectal cancer.
  • The classification describes how certain the causal relationship is - not that the risk is as great as with smoking.
  • Pure meat and pure minced meat without additives are not automatically processed meat.

What did the Norwegian survey show?

Figures from Statistics Norway's living conditions survey on health in 2025 show that 25 per cent of the population state that they eat processed meat four to seven times a week. Among people between the ages of 16 and 24, the proportion is 40 per cent.

In the youngest group, about half of the men and one in three women eat processed meat at least four days a week.

The survey included 5,700 people living at home aged 16 and over and had a response rate of 48 per cent. It measured how often the foods were eaten, not portion size or number of grams. The figures therefore show that processed meat is often part of the diet, but not exactly how much each person eats. Read SSB's survey.

SSB's examples include bacon, cold cuts, sausages, hamburgers, salami and minced meat. Here it is important to specify that pure minced meat without salt or other additives is not normally considered processed meat according to IARC's definition.

Finished hamburgers, spicy stuffing and meat products with salt, smoke, nitrite or other preservatives can, on the other hand, fall into the processed category.

What is considered processed meat?

IARC defines processed meat as meat that has been transformed through salting, curing, fermentation, smoking or other processes to improve taste or shelf life. The category includes both red meat and poultry products. See IARC's definition and assessment.

Common examples are:

  • Bacon and cured ham
  • Salami, pepperoni and cured sausages
  • Grilled sausages and Wiener sausages
  • Cooked ham and preserved cold cuts
  • Corned beef, canned meat and beef jerky
  • Ready-made burgers and stuffing products with additives
  • Smoked or nitrite-preserved meat products

Products that are not normally considered processed meat, provided they do not contain salt or preservatives, are:

  • Pure beef, lamb, pork or venison
  • Pure minced meat or patty dough
  • Pure chicken or turkey meat
  • Offal without preservation

This does not mean that unprocessed meat should be eaten in unlimited quantities. The point is that the two categories should not be mixed up when research and risk are assessed.

What does the IARC Group 1 classification mean?

The IARC placed processed meat in group 1, "carcinogenic to humans", because there is sufficient evidence for a causal link with colon and rectal cancer.

Pure red meat was placed in group 2A, "probably carcinogenic", where the documentation is weaker.

This is often misunderstood. Tobacco smoke and processed meat are both in group 1, but that does not mean that they pose the same risk. The group describes how certain the research is that a causal relationship exists. It does not indicate the size of the risk.

The IARC's oft-quoted calculation is that 50 grams of processed meat daily was associated with an approximately 18 percent higher relative risk of colon and rectal cancer.

Relative risk must not be confused with percentage points. If an imaginary basic risk was five per cent, a relative increase of 18 per cent would correspond to approximately 5.9 per cent – ​​not 23 per cent.

The actual individual risk is influenced by, among other things, age, heredity, activity, alcohol, smoking, body weight and overall diet.

What does the overall research show?

Colon and rectal cancer

This is the area with the most consistent documentation. Large cohort studies and meta-analyses consistently find that higher and more frequent intake is associated with higher risk.

A comprehensive umbrella review published in 2026 found about a 17 percent higher risk per 50 grams of processed meat daily. At the same time, the authors assessed the safety in several dose–response estimates as low or very low, mainly because the data base is observational. Read the umbrella review.

It is therefore reasonable to take the connection seriously, while at the same time the risk figure should not be presented as a precise personal facsimile answer.

Type 2 diabetes

A Burden of Proof analysis published in Nature Medicine in 2025 found that processed meat was associated with a moderately higher risk of type 2 diabetes compared to zero intake. The researchers characterized the overall evidence as limited but consistent enough to support reduced intake. Read the study in Nature Medicine.

The relationship can be influenced by salt, energy density, food quality, body weight, lifestyle and which foods the meat replaces.

Cardiovascular disease and mortality

Several observational studies find connections between a high intake and cardiovascular disease, stroke and total mortality.

High sodium content, unfavorable food matrix and the overall dietary pattern are possible explanations. The strength of evidence for many of these outcomes is nevertheless lower than the media headlines may give the impression of.

Inflammation and oxidative stress

It is biologically plausible that certain ingredients and preparation products can contribute to oxidative stress. That doesn't mean that every meat meal creates chronic inflammation.

Controlled studies of clean, lean red meat have not consistently shown increases in common inflammatory markers when the meat is included in an otherwise balanced diet. The difference between a pure raw product and a preserved, salt-rich meat product is therefore important.

Why do scientists not agree on all the details?

Long-term randomized studies of diet and cancer are difficult, expensive and often unethical. Knowledge is therefore mainly based on observational studies where people report what they eat and are followed over time.

Such studies are valuable but have limitations:

  • Food intake is often underreported or misremembered.
  • "Processed meat" can mean different products in different studies.
  • People with high intakes may also smoke more, be less active or eat less fibre.
  • It is not always clear what the meat replaces.
  • Production methods, salt content, portions and additives vary.
  • Lifestyle factors cannot always be fully statistically corrected.

The controversial NutriRECS recommendation from 2019 believed that adults could continue their current intake, based on low evidence certainty and small absolute differences. The recommendation was heavily criticized by several cancer and public health circles.

The disagreement shows how researchers can weight low evidence certainty, small individual risks, the precautionary principle and possible consequences at population level differently.

A balanced conclusion is therefore not that "meat is poison" or that "research doesn't matter". The conclusion is that frequently processed meat is an influenceable risk factor, and that practical changes can provide health benefits without fear or extremism.

Possible mechanisms

Nitrite, nitrate and N-nitroso compounds

Nitrite and nitrate are used in many meat products to inhibit bacteria, preserve color and extend shelf life.

Under certain conditions, nitrite can contribute to the formation of N-nitroso compounds. Several of these are carcinogenic in experimental models. Heme iron in red meat can promote some of the reactions in the gut.

This does not mean that every nitrite-containing meal is harmful. Dose, preparation, food matrix and which protective substances the meal contains play a role.

Heme iron and lipid peroxidation

Heme iron is a readily available form of iron, but can also catalyze oxidation reactions. In laboratory and mechanism studies, this can contribute to lipid peroxidation and reactive compounds in the gut.

The mechanism is plausible, but alone cannot tell how great the risk is for a particular person.

Salt

Many processed meat products contain a lot of sodium. High sodium intake can increase blood pressure, especially in salt-sensitive people, and is an established risk factor for cardiovascular disease.

Strong heat and scorched surface

When frying and grilling at a very high temperature, heterocyclic amines and polycyclic aromatic hydrocarbons can be formed.

The quantity typically increases with direct flames, long cooking times and burnt surfaces. The American Cancer Institute emphasizes that the mechanisms are relevant, but that human studies do not provide a simple and certain risk figure for the different preparation methods. Intestinal environment and the totality of the diet

Meat, protein, fat and additives can affect gut metabolites, but human studies of meat and the microbiome are very different.

The most consistent practical signal is that the whole diet matters a lot. Fermentable fibres, vegetables, herbs, berries and legumes support a different intestinal environment than a low-fibre diet dominated by industrial products.

It is therefore too easy to say that one product "destroys the intestinal flora". It is more precise to say that frequent processed meat in a low-fibre diet can contribute to a less favorable metabolic environment.

Is nitrate in vegetables the same as nitrite in meat?

No. The food matrix is ​​different.

Vegetables are an important source of nitrate, but also contain vitamin C, polyphenols and other plant substances that can inhibit the formation of unwanted N-nitroso compounds.

Nitrate from vegetables is also part of the body's nitric oxide system and can have beneficial effects on blood vessels and blood pressure.

This shows why one isolated substance does not necessarily tell us the health effect of a complete food product.

Is "without added nitrite" always better?

It may be a relevant quality criterion, but the label must be examined carefully. Some products use celery powder or other natural, nitrate-rich ingredients instead of regular nitrite. The final product may still contain nitrate or nitrite.

Therefore, consider the entire product:

  • How long is the ingredient list?
  • Is the meat proportion high?
  • How much salt does the product contain?
  • Are sugar, starch, flavorings or smoke flavoring added?
  • Is the product cured, fermented or smoked?
  • How often do you eat it?
  • How big is the portion?

A shorter and more comprehensible list of ingredients is often positive, but "natural" or "without added nitrite" is not a free ticket to unlimited consumption.

  • Replace salami with eggs, mackerel, sardines, hummus or leftover clean meat.
  • Swap your bacon breakfast several days a week for eggs, vegetables and avocado.
  • Replace grilled sausages with fish skewers, chicken, pure meat mince or vegetable skewers.
  • Replace ready-made burgers with homemade burgers made from pure meat, fish or beans.
  • Swap ham toppings with home-roasted chicken or turkey.
  • Replace pepperoni on pizza with mushrooms, peppers, olives, chicken and herbs.
  • Replace sausage in casseroles with lentils, beans, fish or pure meat.
  • Serve less meat and more vegetables and legumes in the same meal.
  • Make fish a regular weekly habit.
  • Let processed meat be a deliberate exception rather than a standard solution.

This is how you cook meat more gently

  • Use moderate heat and avoid charring.
  • Turn the food often.
  • Remove black and burnt parts.
  • Avoid fat dripping directly onto the flame and creating a lot of smoke.
  • Feel free to marinate with lemon, vinegar, garlic, rosemary or thyme.
  • Combine the meat with vitamin C-rich vegetables.
  • Varies with pot boiling, pulling, steaming and oven baking.

Products that can support a better diet

No oil, antioxidant or capsule negates the risk of a diet with a lot of processed meat. The products should support good choices – not be used as compensation.

Organic extra virgin olive oil

Extra virgin olive oil contributes monounsaturated fats and polyphenols. It goes well with vegetables, salads, pulses and cooking at moderate heat.

Omega-3 and fatty fish

Fatty fish provide EPA, DHA, protein and micronutrients. For people who eat little fish, a quality-assured omega-3 supplement may be relevant after individual assessment.

Choose products with a clear content declaration, oxidation control and relevant quality documentation.

Fiber-rich raw materials and fermented food

The first choice for the intestinal environment is food: vegetables, berries, herbs, lentils, beans, nuts, seeds and fermented foods you can tolerate.

Prebiotic fibers or probiotics can be useful in certain situations, but should be adapted to tolerance, symptoms and medical context.

Common questions

Is minced meat processed meat?

Pure minced meat without added salt, nitrite or other ingredients is not normally considered processed meat. Ready-made seasoned stuffing, burgers and meatballs can be processed.

Are chicken spreads processed meat?

Yes, if it is salted, smoked, preserved or has substances added for flavor and durability. Processed meat can be made from both red and white meat.

How much processed meat is safe?

The research has not established a universal threshold where the risk suddenly goes from zero to dangerous. The Norwegian Directorate of Health recommends eating as little processed meat as possible. See the dietary advice.

Do I have to give up bacon and sausages altogether?

Not necessarily. For most people, the most important improvement is making the products occasional choices rather than daily habits.

Is organic bacon risk-free?

No. Organic production may have other advantages, but curing, smoking, salt and possibly nitrite still make the product processed.

Can vitamin C protect against nitrosamines?

Vitamin C can inhibit certain nitrosation reactions, but it has not been documented that a vitamin C supplement makes a high intake of processed meat harmless.

Do probiotics help if I eat a lot of processed meat?

Probiotics may have specific uses, but do not replace a high-fiber diet or reduced intake. The effect is strain- and situation-dependent.

Conclusion

The research does not provide grounds for portraying all meat as dangerous. On the other hand, it gives a clear enough signal to reduce frequent consumption of processed meat.

The strongest documentation concerns colon and rectal cancer. The correlations with type 2 diabetes, cardiovascular disease and mortality have more varying strength of evidence.

The most robust advice is simple: choose more often food that still resembles the raw material from which it came. Let fish, eggs, legumes, clean meat, vegetables, berries, herbs, nuts, seeds and extra virgin olive oil form the basis.

Then you don't just reduce one possible load - you improve the entire environment in which the body works.
