When a story becomes history in the true sense of the word. Atlas Olive Oils springs from Fes at the end of the 19th century – Morocco's spiritual capital and one of the world's oldest cities. Here Boujida Aqallal began to cultivate olive trees, press his own oil and develop a knowledge of soil and climate that earned him the honorary title "Amine El-Fellaha" - the wisest of farmers. Since then, four generations have carried on this passion and created what is today considered to be some of the world's most distinctive olive oil.

At the foot of the snow-capped Atlas Mountains, more than 1.4 million organic olive trees in one of the world's most extreme terroirs. Here, the days are scorching hot, the nights icy cold and the soil rich in minerals – a microclimate that pushes the olive trees to produce extra high levels of natural polyphenols and aroma substances. The result is oils with intense fruitiness, clean taste and ultra-low acid (<0.2°) – the absolute hallmark of genuine extra virgin quality.

The olives are mechanically harvested at the perfect time and pressed within 20 minutes in a cold, mechanical process developed with European pressing technology. This precision preserves the natural color and taste, as well as the olive tree's own antioxidants. Together, this gives extra virgin olive oils that are normally only found in international gourmet shops, Michelin restaurants and high quality wellness markets.
